Carrot Cake - Cooking Revived

Ingredients
 2 cups Carrot (grated)
 1 cup Dates (minced)
 1 cup Cashew nuts (minced)
 2 Eggs
 1 ½ cups Sugar
 3 Cloves
 ¼ Cinnamon (inch piece)
 1 ½ cups Oil
 ½ cup Honey
 2 cups Wheat flour
 1 tsp Vanilla essence
 ½ tsp salt
 ¾ tsp Baking soda
 ¾ tsp Baking powder
 1 tsp Vinegar
 1 ½ Ghee

Cakes are a must for all occasions. As Ramadan is fast approaching, let us make one more dessert - a cake and that too in a pressure cooker. So now, this is good news for those who do not have an oven at home and wants to make a cake. Here is the recipe to make yummy carrot cake in a pressure cooker.

Keep ready all the ingredients to make the cake. Grind together sugar, cloves, and cinnamon to a fine powder and keep aside.

Layer the cooker bottom with salt and keep it on gas for some time.

Sieve the flour with baking powder, salt, and baking soda. Combine the carrots, dates, and nuts with the dry flour mixture thoroughly. Beat the oil with powdered sugar.

Then add the eggs and beat for some more time. After that add the vinegar and vanilla essence. Then beat for some more time.

You can grease the baking pan with some ghee. If you want, you can beat it for a few more minutes.

You can add in the dry mix to the wet mix slowly. If you feel the batter is too thick, add a bit of milk to get the consistency of cake batter.

Now, pour the batter into a greased pan. Then place a trivet inside the preheated pressure cooker and place the pan on the trivet. Make sure you cover the cooker with a plate.

Next comes the cooking. Keep the gas on medium to low flame for about 40-45 minutes and the healthy yummy carrot cake is ready.
