Drumstick Soup - Cooking Revived

Ingredients
 4 Drumsticks
 5 cups Water (or stock)
 1 Maggi soup cube
 1 Egg
 2 tsp Cornflour
 Salt to taste
 Pepper for seasoning

Drumstick soup is undoubtedly one of the healthiest soups that can be made in a jiffy. This recipe comes from my mom's cookbook. Delicious, healthy as well as easy to make. This soup with minor changes can be made for the vegetarians as well as non-vegetarians.

To make the drumstick soup, first you need to cut them and boil it in 4 cups of water. When you buy drumsticks, make sure they are fresh and tender.

Once cooked take out the drumsticks and let cool for some time. Then, retain the water.

The next step is to take out the pulp from the drumsticks. For this, slit open the drumsticks and then scoop out the pulp. After that add 1 cup of water retained to this and grind it to a fine paste. Now add stock or water to this. Let it boil. Add in the soup cubes at this point.

If you do not want to use soup cubes, you can use chicken stock or veg stock, as well. I have used cubes to make this. Add water according to your need to this and let it boil.

Add salt and pepper according to your taste.

In the meantime, keep ready cornflour mixed in half a cup of water. You can use milk as well instead of water. This will give an extra creamy texture and colour to the soup.

The next step is to pour in the egg to the soup. For this, beat the egg well. Pour the whisked egg very thinly to the boiling soup. Make sure to stir continuously as you pour the egg. Then add the cornflour mix to this. Let boil. You can adjust the consistency of the soup accordingly.

Vegetarians, can avoid this step and can saute some shallots in ghee and add it to the soup. You can even garnish with some parsely leaves as well. Serve hot.
