Veg Ball Curry

Ingredients
 2 Potatoes (boiled and peeled)
 1 Carrot
 5 Bush Beans minced
 3 Tomatoes
 50 Grams Paneer
 2 Onions minced
 1 Green chilli minced
 2 Cloves of Garlic minced
 ½ Inch Grated Ginger
 100 ml Oil to fry
 1 tbsp Cornflour
 1 tsp Chilli Powder
 ½ tsp Turmeric powder
 Salt to taste
 ½ tsp Garam masala powder
 1 ½ cups Coconut milk
 6 Cashew nuts
 Coriander leaves to garnish

Veg ball curry is a delicious curry which is easy to make. To make the veg balls, heat 2 tbsp oil, add 1/4th of the minced onion and sauté well till it gets translucent. Then add ginger minced, green chilli and garlic. Sauté for a while.

Add grated carrot, minced beans till it is cooked. Mash the potatoes with paneer and add to the vegetable mixture. Then sauté for a while after adding salt and a pinch of garam masala powder. Take it down from heat, add corn flour and knead it well. Make small balls of the mixture. Then deep fry in hot oil till it gets golden colour. Then keep aside.

For the gravy of the Veg Ball Curry , make a purée of the tomatoes and grind the cashew nuts with coconut milk. You can also use canned coconut milk or fresh coconut milk.

Now, sauté rest of the minced onions till it gets translucent. Then add turmeric powder, chilli powder and the tomato purée. Let it simmer on the gas for 5 to 10 minutes.

Then add the ground cashew with coconut milk mixture and let it boil for a minute. Take out from fire after adding garam masala powder. Pour the hot gravy over the vegetable balls and garnish with coriander leaves. Your Veg Ball Curry is ready. Have it with roti or jeera rice/ pulao etc.
