12 Jan Arrowroot Dessert
Arrowroot dessert is a very easy to make, delicious as well as nutritious dessert. Though it is particularly made on Thiruvathira day, it is often enjoyed as a halwa or kheer/payasam. It all depends on your taste and in what consistency you need it.
To make the arrowroot dessert, you need the arrowroot powder or Koovapodi - as we say in malayalam. To start with, first, wash and seive the powder to clean it properly. Soak in water and let it rest for 20 minutes. Then drain the water.
The next step is to heat 1 tbsp ghee and fry the coconut chips till it gets golden brown. Take it out and keep aside.
In the same vessel combine the arrowroot powder with water and keep stirring continuously on medium flame till it cooks. Make sure not to form lumps. Lumps will spoil the texture and taste of this dessert.
Once it’s cooked add melted and strained jaggery syrup to it. Mix it well. Keep adding rest of the ghee in small quantities in between. Wait till it thickens and gets to the desired consistency.
Finally add in the cardamom powder and fried coconut chips. Mix it well. Your arrowroot dessert is ready. You can serve hot or cold, as you desire.
