Ingredients
 500 g Carrot (chopped fine)
 1 cup Grated Coconut
 2 Onions (medium sized - chopped)
 5 Green Chili
 A few Curry Leaves
 1 tsp Mustard seeds
 2 tbsp Oil
 Salt to taste

Carrot thoran or carrot upperi is a part of the Kerala Sadhya. Thoran as such is a part of every meal in Kerala and Tamil Nadu, where it is called Poriyal. Thoran can be made with any type of vegetables like cabbage, beans, beetroot, spinach, etc in the same manner. Here we will be making the thoran with the carrot.

For this first heat oil in a heavy bottom pan and when the oil is hot, add in the mustard seeds. After the mustard seeds splutter put the chopped onions, chopped green chilis, and curry leaves. Now, saute well for a few minutes. Once done, you have to add in the chopped carrots and blend well. Next is to add the grated coconut. Make sure you mix all the ingredients well. Add salt as required and mix well. Cover and cook on low flame for almost 10 minutes. Make sure you open the lid and mix twice in between.

Do not add water.

Yummy carrot thoran is ready. It is the best side dish with rice.
