 750 g Carrot (Finely grated)
 2 tbsp Ghee
 ½ cup Sugar
 1 ½ cups Milk
 ½ cup Cashew nuts (coarsely ground)
 3 tbsp Condensed Milk
 2 tbsp Muskmelon seeds or Pumpkin seeds

Gajar ka Halwa or Carrot Halwa is a very delicious and popular dessert in India. Here is the yummy recipe to make this dessert with ease.

Now here are the preparations that you should do. You have to wash and peel the carrots first and then you need to grate it very finely. After that, you need to squeeze out the excess water from the carrot with your hands. Make sure you don't skip this step.

Then, grind the cashew nuts coarsely and keep it ready.

Next, heat oil in a pan and heat 2 tbsp of ghee. Now, add in the grated and squeezed carrots and saute well for some time. Afterwards, cover and cook for a couple of minutes. By this time, the carrots will be soft. Then, you add in the sugar and mix well. Saute till the sugar melts completely and the colour changes. The next step is to add the milk and the coarsely ground cashew nuts. Mix well and cover and cook till the milk is completely reduced and the carrots cooked fully. Open the lid a couple of times to ensure that all the ingredients are mixed well and it does not stick to the bottom of the pan.

Finally, add some condensed milk and then add a few muskmelon seeds to it and blend well. Cook in an open pan till it comes to the required halwa consistency and all the milk and condensed milk is reduced.

Yummy Gajar ka Halwa or Carrot Halwa is ready. Indian festivals and functions are actually incomplete without this dessert. You can garnish this gajar halwa with some muskmelon seeds or pumpkin seeds.

Now, here is a tip to make it yummier. Place a scoop of the halwa on a small slab of vanilla ice-cream and have it. You will love it!!

Note: You can increase or decrease the quantity of sugar and condensed milk according to your taste and the sweetness of the carrot. Adding muskmelon seeds is completely optional.
