Ingredients
 ½ Indian Yellow Cucumber (Vellarikka)
 1 cup Red Cow Beans (soak it overnight or for at least 4 hours)
 1 Onion
 4 Green Chilli
 A few Curry Leaves
 1 cup Thick Coconut Milk
 1 cup Thin Coconut Milk

Olan is a traditional Kerala dish and is a part of every sadhya. It is not spicy and is made in coconut milk. Here is the full recipe to make Olan.

To make olan, we need to soak the Red Cow Beans or vanpayar overnight or at least 4 hours. Once it is soaked fully, pressure cook it for 2 whistles or till the beans is cooked well.

In the meantime, you can cook the Indian Yellow Cucumber or the Vellarikka along with onions, green chilli and curry leaves. Add a cup of water for this. You can also add thin coconut milk and cook till the Indian Yellow Cucumber id soft and fully cooked.

The next step is to add the cooked Red Cow Beans or vanpayar to this. Do not add the excess water from the cooked beans. This will change the colour of the olan. Mix well and add salt as required. Add in the second coconut milk and bring it to a boil.

When this starts to boil, you have to add in the thick coconut milk to this. After adding in the thick coconut milk, make sure do not boil the curry for too long. When the bubbles start appearing, switch off the flame. This is a very healthy and delicious veg-curry and I am sure all vegetarians will love this Olan. Your kids will love this curry.

Delicious Olan is ready. Serve it hot with rice!
