You can use any fish to make this dish. Just remember that the cook time will vary depending on the size of the fish. I have used Mackerel fish. You can use pearlspot or pomfret as well.

Clean the fish and make gashes on both sides of the fish.

Marinate the fish
2

Then, you need to marinate the fish in turmeric powder, pepper powder and salt. Refrigerate for at least half an hour to up to 2 hours. It is even better to marinate and leave it overnight.

Make the Masala
3

Take ginger, garlic and half the quantity of onions and green chilli and grind them to a coarse paste. Chop the remaining onions, green chilli and shallots. Heat oil in a pan and when the oil is hot add in the onions, green chilli, shallots, curry leaves and the coarsely ground paste. Saute well till the onions are cooked and soft. Add salt as required.

4

Once done, add in the turmeric powder and pepper powder and saute for a couple of minutes. Then add in the chopped tomatoes and saute well. Cook till the tomatoes are really soft and cooked well. Finally add in chopped coriander leaves and mix well. Keep side.

Fry the Fish
5

Next step is to fry the fish. Make sure you do not over cook the fish. We need it only around half cooked. Heat oil in a tawa and fry fish on both sides.

Wilting and Wrapping
6

Next is to wilt the banana leaves. Wash the banana leaves and wipe it with a clean cloth. Then place it on the stove and wilt it. Make sure that the leaf is really soft so that it does not break when you wrap the fish in it.

7

Once the leaf is wilted properly, we will wrap the fish in it. Place the banana leaf in a plate. Put the masala on the leaf and then place the fried fish n the masala. After that, add another layer of masala on the fish so as to cover the fish completely.

Now carefully wrap the banana leaves. Make sure that the masala does not ooze out.

Finally place wrapped fish on a hot tawa, Cover and cook on a low to medium flame and cook till the fish is done. After around 4-5 minutes flip the fish and cook on the other side as well.
