 5 tbsp Tomato paste
 1 Tomato chopped
 ½ cup Pitted Kalamata Olives
 ½ tsp Fennel seeds
 ¼ cup Extra Virgin Olive Oil
 Freshly ground pepper

Tomato & Olive Pasta Sauce is an integral part of the international cuisine, Italian to be precise. Now, if you want your pasta to taste really delicious, why not just pour this sauce to your pasta?

To start of with, first sautée onions and the salt in oil on medium heat until it is slightly browned. Then comes the next step, where you have to add in the fennel seeds and tomato paste.

Further, let this cook for a few minutes and this will help to cook out the rawness of the tomato paste.

After this you can add in 2 cups of water and then allow it to simmer over medium low heat for 15 minutes. Moreover, be sure to keep the lid of the pot on, for this process. This will not only help to hold the flavours in the sauce but also will help to combine it properly.

As a next step, you can add in the chopped tomatoes and olives and let the sauce to cook for another 10 minutes. Meanwhile, you can taste the sauce to see if you need to adjust the salt.

Finally, you can serve this sauce over your favorite pasta (sphagetti, tagliatelle, fetuccini or fusilli and so on). This is the stage where you season your pasta and sprinkle it with herbs. I like basil and green onions.

Alternately, you can maybe add in some dried seasonings or herbs, if you want to. It is your choice at this stage.
