Ingredients
 1 cup Vermicelli
 1 ¼ cups Hot water
 1 Carrot
 4 Beans
 1 Tomato
 1 Onion
 2 Green chilli
 ¼ Ginger (inch piece)
 A few Curry leaves
 2 tbsp Coriander leaves (chopped)
 2 tbsp Oil and Ghee
 ½ tsp Mustard Seeds
 1 Dry Red Chili
 ½ tbsp Bengal gram dal
 6 Cashew
 1 pinch Asafoetida powder

When you have to cook with vermicelli, the first thing that comes to your mind is vermicelli payasam or vermicelli kheer. Now, here is something different. Here is the recipe to make vermicelli Upma. This variety of upma is tasty as well as healthy.

To make the vermicelli upma, you need to first roast the vermicelli to golden colour. (Either you can dry roast it to make it a healthy option, or you can even roast it with a little ghee/oil). Keep it aside.

Now, heat oil and ghee together. When hot, add mustard seeds and when it begins to crackle, put in Bengal gram dal and cashews. When it becomes light golden in colour, add onion, ginger, green chili, and curry leaves. When the onion becomes soft, add in tomato. Let it fry well. Then add carrot and beans. If you want you can also cover and cook this.

When the vegetables are done, add fried vermicelli and salt, as required. Mix this well, then pour half the quantity of water, cover it and cook. Then, open the lid mix well and pour rest of the water. Again cover and cook. When it’s cooked open the lid and keep it on slow fire till the water is completely absorbed. Then garnish with coriander leaves (This is optional). Yummy vermicelli upma is ready and it can be served with chutney or tomato pickle or it can be had as it is.
