 ½ kg Beetroot (Chopped fine)
 1 Onions (big - chopped fine)
 5 Green Chilli (Chopped fine)
 5 Garlic Flakes (Crushed)
 A Few Curry Leaves
 1 cup Grated Coconut
 Salt to taste
 Oil for sauteing

Beetroot thoran or beetroot upperi, as we call in some parts of Kerala is easy to make and is a part of almost every meal. You can make a thoran with almost all vegetables. I have already given the recipe of carrot thoran. But for this one made with the beets, I have added some crushed garlic for some extra flavour and taste. You will surely love this one.

To make the sauteed beetroot with coconut, you need to keep all the ingredients ready, as per the ingredient list. Now, heat oil in a pan. When the oil is hot add in the mustard seeds. when they start to splutter, add in the chopped onions, green chilli, curry leaves and the crushed garlic. Saute well for some time. When the onions are soft, add the chopped beetroots and grated coconut. Mix well. Then add salt as required and mix well again. Cover and cook on a low flame till done. Make sure you open the lid and mix well a couple of times in between.

Some people prefer to add half a cup of water to this. You can do it as well, but I prefer to cook it without any extra water. It will take almost 10 - 15 mins for the beets to get cooked properly.

Yummy beetroot thoran is ready and you can have it with rice or even roti.
