Kuska is a yummy rice recipe of the south indians. It is very easy to make and can be had with any yummy veg or non-veg curry.
To start with you have to wash and keep aside the rice. In addition to this, boil the required amount of water to cook the rice. Usually, you will need double the quantity if rice. (i.e. 1 kg of rice for me when measured was equal to 4 1/2 cups). So I used 9 cups of water.
Now make a coarse paste with the shallots, 1 onion and a tbsp of coriander leaves. If you like its flavour, you can add more as well. If you want it a bit more spicy, you can also grind 2 green chillies along with this.
The next step is to saute the ingredients. For this, in a heavy bottom kadai or cooker, first add oil and ghee. To this add the spices like cardamom, cloves, cinnamon, star anise and mace. After that, when it sputters add the chopped onions. Then, saute for a minute. To this, add the onion paste, ginger garlic paste and slit green chillies along with the remaining coriander leaves, curry leaves and mint leaves, as well. Saute well, again. You can also add some salt at this point so that the masala is well sauted.
Next step is to add the rice to this. Then, saute for some time till the masala is mixed in well with the rice. Now you have to add the boiled water. You can also add salt as required to this. Let boil. Finally, close the lid and simmer. Let it cook till all the water is absorbed. Now, the yummy Kuska is ready to eat.
You can also garnish the kuska with cashew nuts and kismiss or raisins roasted in ghee. This step is completely optional.
